Chia + Fruit = Love
Now is the perfect time for all things orange, pineapple, strawberry, apricot, and mango. From healthy snack, to delicious dessert, to… foot scrub! The antioxidants in these spring fruits are good for you from head to toe. Combine them with superfood chia seeds, and you have a nutritional powerhouse.
It is super easy to make your own chia pudding!
Ingredients: (makes 2 cups)
1 cup coconut, soy, or almond milk
1/4 cup chia seeds
1/8 cup agave, maple syrup, or honey
1/8 tsp. vanilla or almond extract
A few pinches of cinnamon
Prepare: Combine milk, chia seeds, sweetener, extract, and cinnamon. Add more sweetener, extract, and/or cinnamon to your taste preference. Set aside for 10 minutes, until thickened. Store in fridge! No cooking required. (This is our kind of recipe.)
Serve: Spoon into a small bowl, and top with your favorite seasonal fresh fruit! Mango is OUR favorite, but strawberry is also SO good.
If you haven’t had superfood chia pudding before, it’s super similar to regular pudding… Only it’s WAY better for you. Here’s why you want chia in your world:
- It is the best plant source for omega-3 fatty acids. (Super important for vegetarians and vegans!)
- 2 tbsps. of chia seeds pack 4g protein and 11g dietary fiber (for digestive health).
- It has calcium, phosphorous, and magnesium for strong bones and teeth!
- It has NO sodium, and NO cholesterol.
Try adding chia seeds to smoothies, or to thicken sauces and salad dressings. Just 2 tbsps. for a SERIOUS nutritional boost!
Depending on your age, you might remember those Chia Pet commercials from the 80’s (cha-cha-cha-Chia!) Yup—same stuff. Who knew?!
